Chef’s Recipe: Jasenka Matisic’s Vanilla Crescent Cookies
For our The Best of Croatian Cooking episode on Anna & Kristina's Grocery Bag, Jasenka Matisic (Kristina's mom) and her friend Zdenka Zivkovic were our guest judges. Jasenka's shares her special cookie recipe for you to enjoy.
250 grams sifted flour
100 grams ground nuts (pecan or hazelnuts work well)
210 grams of unsalted butter
grated zest of half a lemon
70 grams of sugar
1 vanilla bean split, scraping out the inner soft seeds
confectionery sugar for dusting
Preheat oven to 350 F.
Cream butter with sugar, then add all the flour, the vanilla bean seeds, the lemon zest and the nuts. Mix well and form a dough. Let the dough rest for 10 to 15 minutes.
Using your hands, roll pieces of dough into crescent shapes and put them on an ungreased cookie sheet. Bake for 8 to 10 minutes. Watch the cookies carefully as they should not brown at all.
Let rest and when cool, roll them carefully – they’re fragile – in confectionery sugar and serve!
