A steak by any other name should taste so lean
It�s full-on BBQ season and we've got a major beef: if you see "buffalo" at the butcher shop or in a cookbook, it should actually say bison! Though the names are used interchangeably, bison are the North American species, while buffalo are from Africa and Asia.

After visiting a bison ranch on Vancouver Island, we gained a new appreciation for this healthy alternative to beef. Bison is extremely lean and much higher in protein, iron, and other vitamins and minerals than other red meats. In fact, bison is three times leaner than skinless chicken with about the same amount of protein! (Bison has 2.42g of fat per 100g, while skinless chicken has 7.41g of fat*.)

And flavour? Phenomenal! But remember, bison cooks much faster than beef since there's so much less fat. We learned that the hard way when we tested the cookbook "Alinea". Watch for this Anna & Kristina's Grocery Bag episode this fall on W Network.
