Your Spring and Summer Cocktail
As warmer weather is arriving in many parts of the country my thoughts are turning to summer parties, what to serve the next time I'm entertaining friends al fresco and what to order when hitting restaurant patios this weekend.
In every scenario I see myself with an Aperol Spritz in hand. It is my preferred aperitif for a sunny afternoon. A little sweet, a little bitter and not too boozy. I think of it as the grown up version of Tang. (Although I do have to remind myself it is indeed a cocktail, as it’s so refreshing I’m prone to chugging it back.)
If you’ve been to Italy, you’ve seen the locals sipping an Aperol Spritz as their before dinner “aperitivo”. Aperol is a liquer made up of flavours of orange, rhubarb and herbs. It’s similar to Campari, but less bitter.
Making your own is simple. Pour 3 parts prosecco or sparkling wine, 2 parts Aperol and a splash of club soda over ice. Garnish with an orange slice. Use less Aperol if you want it a bit less bitter.
